Countdown to the Festive Season

The Festive Season  is right around the corner, and we are so excited, we’ve decided to start the countdown! Join us in opening a special countdown surprise each week for five weeks. At Time + Tide, we value immersive experiences above all else; that means engaging and delighting the senses in everything that we do. It keep us present and connects us to the wonders that nature has to offer.

Taste the adventure, taste the energy and excitement in the air. New beginnings and a new year is on its way and the festive season is about to begin. To share the festive spirit, our first countdown gift features recipes for our Vanilla Bees Knees cocktail from Miavana along with the delectable aubergine rolls served up at Time + Tide King Lewanika.

Miavana's Vanilla Bees Knees

Ingredients

50ml Malagasy Gin

1/4 Malagasy Vanilla

10ml Wild Honey

1 Lime cut into Wedges 

Method:

1. Take a knife and scrape the seed from the vanilla bean.

2. Add Gin, vanilla and Honey into a shaker with ice and shake well.

3. Add crushed ice into a glass, squeeze and drop your lime slice into the glass. Strain shaker over the ice.

Feta, Yoghurt + Sundried Tomato Aubergine Rolls

Ingredients

2 aubergines

Olive oil for brushing

1 garlic clove, crushed

4 tbsp Greek yoghurt

150g feta, crumbled

2 tbsp finely chopped fresh oregano

20 large fresh basil leaves

10 semi-dried tomatoes, halved

Method:

1. Cut the aubergines lengthways into 5mm thick slices. Heat a griddle pan over a high heat, brush the slices with a little oil and griddle until they begin to char.

2. Meanwhile combine the garlic, yoghurt, feta and oregano in a bowl. Stir well, season and set aside.

3. To serve, spread a heaped teaspoon of the feta and yoghurt mixture onto each aubergine slice, adding a basil lead and half a tomato. Roll the slices up, secure with cocktail sticks and serve with a drizzle of balsamic glaze.
